Plotting through discord is definitely doable, the game discord can be kind of quiet, but I've definitely had luck with individual and group plotting over discord with different players.
January traditionally has a heavier event towards the end of the month, so there's usually a lot of opportunity for plotting with other characters and possible metaplot stuff with that sometimes too.
