I don't know if you're canon familiar, but I have Apollo and Phoenix from Ace Attorney. Apollo is a very put upon young lawyer who just wants to practice law and gets dragged into weird stuff, and Phoenix is a lawyer who embraces how weird his life is and volunteers to do weird things like cross-examine a parrot or perform an exorcism in court to get rid of his homicidal ghost ex-girlfriend.
Do you have a preference for one to play with? For Apollo, I think he probably would have gone to Aziraphale's book shop to study for the bar and would just generally volunteer to help Aziraphale around the store because he'd feel bad about not buying anything, and then he just keeps visiting and rationalizing any weird stuff he sees because he likes the company. For Phoenix, he's more likely to be defending Aziraphale against a murder charge, or in some divine courtroom where he just keeps rolling with the existence of demons and angels.
