Ironically, shipping is something that I struggle with haha. It might be my choice of muses; very few of them (Erza being the big exception) work all that well for shipping. (my two most prominent muses are Erza and Goku, and I have no idea how shipping with Goku would even work despite him canonically being married with two kids)
As far as specific ships with Erza are concerned, my big ones would be Jellal and Mirajane, for opposite reasons.
With Jellal, the two of them are awkward, but have a lot of chemistry and provide a comforting presence for each other. However, any intimacy seems unusual considering how repressed both of them are. Meanwhile, Mirajane and Erza would have a lot of passion, between their rivalry and what happened during the Fairy Penalty Game chapter/OVA, but it's hard for me to picture them in any kind of normal dating setting. (though in both cases, either scenario could definitely happen, and I'd be willing to try playing them out)
I can see why people ship Natsu with Erza, but I feel like Erza views Natsu as more of a little brother, and as the final chapter showed, Natsu isn't too concerned with romance. I could potentially see it working, though in their own weird way - the two of them not realizing that things like eating dinner together or bathing together could be seen as romantic.
Gray has even more obstacles - not only does he have the same issues as Natsu, but Erza comes across as a Gray x Juvia shipper at several points, and she is well aware of how Juvia would react if anything came between her and Gray. I'd be willing to try the other three, but Erza x Gray just seems like it wouldn't work in my eyes.
No need to worry about disappointing people or committing to too much, though. One of the things that I love about Genessia is the fact that it's so relaxed, both in-character and out of character. As long as you post every so often, you're considered active (so if you're feeling burnt out or spread too thin, you can step back from the game for a bit and people shouldn't mind), and I tend to send out reminders when the activity check-in has been posted.
tl;dr version - I'd be willing to try it with most of the characters that you mentioned, but I don't know how good I would be at writing that sort of thing out.
